happy lemon season!🍋💛 this is my recent baking obsession🥹 ~~~~ 🌼🍋 Earl Grey Lemon Squares Recipe🍋🌼 Crust: 1 1/4 cups flour 1/3 cup powdered sugar 1 earl grey tea bag (use 1 tsp of dry tea) 1/8 tsp salt 8 tbsp chilled butter Filling: 1/4 cup fresh lemon juice 1 cup granulated sugar 2 tbsp all purpose flour 1/2 tsp baking powder 1 earl grey tea bag 2 tsp grated lemon rind 3 large eggs 1 tbsp powdered sugar ~ ~ ~ ~ ~ 1. preheat oven to 350° 2. line 8x8 pan. combine filling ingredients, cutting in butter until mixture resembles coarse meal. press into bottom of prepared pan. bake at 350° for 19min or until lightly browned. 3. prepare filling: microwave lemon juice on HIGH for 30secs, then use to steep new earl grey tea bag for 10min. squeeze juice from tea bag into bowl, then discard tea bag. combine sugar, flour, baking powder in bowl. add rind and eggs to juice; whisk until combined. add juice mixture to sugar mixture; stir with a whisk until well combined. 4. remove crust from oven; pour filling onto hot crust. bake at 350° for 23min or until set. cool in pan on wire rack for 30min. then, remove from pan by lifting foil or parchment paper. cut into 16 pieces. sprinkle bars with powdered sugar (~1tbsp) the end!! I’ve had a difficult summer. Lost love I never wanted to lose. Stood on grounds that were crumbling underneath me. Doubted a familiar face. Collected pieces of something broken. It passed, but I was still there, the entire summer I was still there. There were days when eating felt like a chore. I couldn’t articulate the words to describe why I was the way I was. I couldn’t find the words. Other days I had too much to say and talked to people I wish I hadn’t talked to, but when you’re lonely you do stupid things. I spent most of my summer in fear and shame: fear of losing, fear of being, shame of losing, shame of being. It almost felt like that’s all I ever was, a leftover of something bad. I often forget my heart and my love. I’m light and I’m fun. I love live music and a good sunset. I love making my friends laugh. I dance and it looks funny but I still dance.
