1 year body transformation :)  Even if theres not a big difference physically, my mental is so much better. I drink about a gallon of water a day now, have more energy, and I dotn get gym/running anxiety anymore. My starting weight was about 155-160 and now im 138 at 5’4ish. My startong mile time was 11 minutes but now I can run 7-8 minute miles.  I hurt my arm a while ago somwhow so i havent been in the gym, but taking up running instead. 🏴󠁧󠁢󠁳󠁣󠁴󠁿 BUTTERIES 🏴󠁧󠁢󠁳󠁣󠁴󠁿 Butteries are a morning pastry roll that hail from the north east of Scotland, specifically Aberdeen. They are a bit like a cross between a morning roll and a croissant, but are flatter and irregular in shape. Originally they had a hefty addition of salt so they could stay edible for long stretches at sea for the local fishermen. I researched a lot of recipes, all different, and settled here with my version. I hope you enjoy it!  Butteries Makes 12 500g white bread flour 350ml tepid water 7g instant yeast 10g salt  10g soft brown sugar 150g lard (softened) 150g unsalted butter (softened) Add your yeast and brown sugar to the water, stir together and leave for 15 minutes to activate. Add the flour and salt to a stand mixer and mix lightly together before pouring in your activated yeast. Knead till very smooth and bounces back to your touch. Decant into an oiled bowl, cover and leave to double in size.  Whip your softened butter and lard with the paddle attachment till light and fluffy like buttercream.  Tip your dough into a floured surface and roll out to approx 300 x 400mm/ 7-8mm deep. Spend a third of your lard mixture on the bottom two thirds of the dough. Take the top third and fold over then fold the bottom third over that, like folding a letter. Dust with flour. Flip so the sean is on the bottom and refrigerate for 20-30 mins. Do this another twice and after the last refrigeration, roll out to an approx 20mm deep rectangle. Cut into 12 roughly equal squares. Taking each one, fold the corners to the centre, flip over and dimple a bit flatter with your fingers. Cover with plastic wrap and rest for an hour to rise then bake in a preheated oven at 205c for 15 minutes. Move to a wire rack to cool then enjoy.  Best served warm with jam spread on the FLAT side, that’s the proper way! They are kinda mind blowingly good!!
